Stilton. It's the king of British cheeses - and it originated in England’s first purpose-built dairy, here at Quenby Hall over 250 years ago.
Keeping Quenby’s heritage alive today is owner Freddie de Lisle and Head Cheesemaker Sara Strong. Things have changed a little since the 18th Century (the old dairy is now a function hall and its distribution is rather less dependent on horse-and-cart) but the same traditions remain. Milk from local herds is lovingly handled, put into traditional ‘hoops’ and then matured for up to 12 weeks to create a uniquely creamy cheese. It’s delicate yet sophisticated in flavour and texture, with the versatility to work as beautifully in a light summer salad as it does on a traditional Christmas cheeseboard.
Quenby Hall is one of only six dairies permitted by law to make Stilton; and our unique cheeses have received acclaim from cheese connoisseurs all over the world, winning many awards since production restarted in 2005. Click here to see just a few of them.
